How to Choose … an Indoor Grill

Grilling season is finally here. Just because the weather’s warmer doesn’t mean that you have to grill outdoors, though. Whether it’s limited outdoor space or personal preference, an indoor grill can be a great alternative. Some indoor grills lack flavor or space — not these. There’s something wonderfully primal about eating a juicy chunk of barbecued meat, but most of us don’t have easy access to outdoor grills. Indoor grills don’t have quite the same macho cachet as barbecuing over an open fire, but if George Foreman can use one, so can you.

What is it? An electric grill that’s made specifically to be used indoors (not recommended for conventional barbecues). It can, of course, also be used outdoors if the power cord is long enough.

What’s it used for? Cooking meat, seafood and vegetables on a ridged grill that allows the grease to run off. It’s marketed as a low-fat way to cook – sometimes rather grandiosely credited with a ‘patented grease-channeling action’. In truth, any grill will let the fat drip away using the unpatented action of gravity.

What to look for: electric grills can be either single contact or dual-sided. The former works more like a conventional grill – it heats only the surface the food rests on. Dual-sided grills heat both the base and the top that closes down over the food, making it cook much faster.

Cleaning is much easier if the ridged grill parts are removable, because they can be submerged in water, whereas the heating element cannot.

What else? These grills are also good for making panini (pressed sandwiches). While indoor grills don’t give off nearly as much smoke as regular barbecues, you should still make sure you have adequate ventilation.
